Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs
  • 2 tbsp butter
  • 1 shallot or yellow onion diced
  • 3 cloves garlic minced
  • 2 sprigs fresh rosemary
  • 1 tsp fresh thyme
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 2 tbsp cornstarch + 2 tbsp water
  • Salt and black pepper to taste
  • Optional: yellow potatoes, carrots, seasonings
  • Fresh parsley for garnish

Equipment

  • 1 Slow Cooker: I use a 6-quart Crock-Pot, but any similar size will work.
  • 1 Large Skillet: Essential if your slow cooker doesn't have a sauté function.
  • 1 Small Mixing Bowl: For whisking that cornstarch slurry.
  • 1 Digital Meat Thermometer: To make sure your chicken is perfectly cooked and safe.

Method
 

  1. Prep vegetables if using and place in slow cooker
  2. Brown seasoned chicken in butter for 2-3 minutes per side
  3. Deglaze pan with broth, scraping up bits
  4. Add aromatics, lemon zest, and seasonings to slow cooker
  5. Cook on high 3-4 hours or low 6 hours until chicken reaches 165°F
  6. Create cornstarch slurry and thicken sauce with cream
  7. Serve chicken with sauce and garnish
