Ingredients

  • Main Ingredients
  • 2 cups cottage cheese 2% or 4% fat for creaminess
  • 3 tbsp unsweetened cocoa powder
  • 3 tbsp sweetener honey, maple syrup, or stevia to taste
  • Optional Add-ins:
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds** for extra thickness and omega-3s
  • 2 tbsp melted dark chocolate for extra richness
  • Splash of milk if needed for blending
  • Toppings Optional:
  • - Fresh berries
  • - Whipped cream
  • - Shaved dark chocolate
  • - Chopped nuts
  • - Mint leaves

Equipment

  • High-speed blender or food processor
  • Measuring cups and spoons
  • Serving bowls

Method

  1. Prep Chocolate (if using): If adding melted chocolate, melt chocolate chips in microwave in 30-second intervals, stirring between each. Set aside to cool slightly.
  2. Combine Ingredients: Add cottage cheese, cocoa powder, sweetener, vanilla extract (if using), and any other main ingredients to your blender or food processor.
  3. Blend Until Smooth: Blend on high speed for 2-4 minutes until completely smooth and creamy. Stop and scrape down sides as needed. If mixture is too thick to blend, add a splash of milk.
  4. Taste and Adjust: Taste and add more sweetener or cocoa powder as desired. Blend again briefly to combine.
  5. Chill (Recommended): Transfer to serving bowls and refrigerate for at least 30 minutes for best texture and flavor. Can be eaten immediately if desired.
  6. Serve: Top with your favorite toppings and enjoy!

Notes

- For smoothest texture: Use full-fat cottage cheese and blend until there are zero lumps
- Sweetener tip: Liquid sweeteners (honey, maple syrup) blend smoother than granulated
- Make it thicker: Add chia seeds and let sit 20+ minutes for them to absorb liquid
- Flavor boost: Add a pinch of espresso powder for mocha flavor
- Storage: Drain excess liquid from cottage cheese before blending for thicker results
Storage Instructions
- Refrigerator: Store covered for 3-5 days
- Freezer: Freeze up to 1 month in freezer-safe containers
