Creamy Chicken Florentine Soup

Ingredients
  

  • 2 lbs cooked chicken shredded
  • 10 oz fresh spinach
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 3 tablespoons butter
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg optional
  • 2 tablespoons lemon juice
  • 1/2 cup grated Parmesan cheese optional

Method
 

  1. Heat butter in a large pot over medium heat. Add onion and cook for 3-4 minutes until softened.
  2. Add garlic and Italian seasoning, cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 5 minutes.
  4. Add shredded chicken and heavy cream. Simmer for 10 minutes.
  5. Reduce heat to low and stir in fresh spinach until wilted, about 2 minutes.
  6. Season with salt, pepper, and nutmeg. Add lemon juice and Parmesan if using.
  7. Taste and adjust seasoning as needed. Serve hot.
