Method
- Heat butter in a large pot over medium heat. Add onion and cook for 3-4 minutes until softened.
- Add garlic and Italian seasoning, cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 5 minutes.
- Add shredded chicken and heavy cream. Simmer for 10 minutes.
- Reduce heat to low and stir in fresh spinach until wilted, about 2 minutes.
- Season with salt, pepper, and nutmeg. Add lemon juice and Parmesan if using.
- Taste and adjust seasoning as needed. Serve hot.
